Nine of the more unique foods that are popular in Cusco are ceviche, quinoa, alpaca, chifa, lomo saltado, uchucuta (which is a green salsa), muña (a mint infused as a tea), cancha (toasted corn) and, cuy (guinea pig).

In case you are not familiar with some of these dishes:

Ceviche is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, and spiced with ají or chili peppers. Additional seasonings, such as chopped onions, salt, and cilantro, may also be added. It is usually accompanied by side dishes that complement its flavors, such as sweet potato, lettuce, corn, avocado or plantain. As the dish is not cooked with heat, it must be prepared fresh to minimize the risk of food poisoning.

Chifa is a culinary tradition based on Chinese Cantonese elements fused with traditional Peruvian ingredients and traditions. The word "chifa" comes from the Peruvian way of expressing that the food is influenced by the Chinese style of cooking.

Lomo saltado is a popular, traditional Peruvian dish, a stir fry that typically combines marinated strips of sirloin (or other beef steak) with onions, tomatoes, french fries, and other ingredients; and is typically served with rice.
